Back again to my blog guysss, now I will tell you about my activity during mid practice in the kitchen, which I before I already mid theory. We have the group for each exam and i get grup two and partice at tuestday after we mid practice we must come to prepare all ingredients and today i came at 09:00 in the kitchen we listen command from chef about all prepare as needed.
In here i and my friend get menu rotasi 1.2 and we share section for each menu and i get dessert and i make choux au croqueliene and hard roll and we used diploma sauce to filling choux au croqueline. After we make choux and hard roll we cleaning the area and we eat together.
But after Chef Aldino checked my hard roll he said that our hard roll failed and we must repeat to make it, but we dont complain cause we can learn from failed and after we make hard roll again and the result is nice. And we cleaned tools who we used for make hard roll and we gathe with my grup for briefing for prepare tomorrow. And today we came back at 17:30.
MID PRATICE
We came in the kitchen at 07:15 early from usualy because we must next my prepare. My section in dessert finished so i help my friend to make butter dressing, parsley oil and garnish for fillet of dory fish, we doing today without Chef dino he came late today so we must do it ourself and after Chef Dino came He command to oneline and said rules of mid practice he said we must finished our menu at 11: 00 a.m. And we must general cleaning in our area at 14 : 00 and washed all tools who we used.
After we get command from Chef we came back to my section to plating and today we to be checker but nothing who handle my section in dessert so I must share my section with my friend, I in the dessert section and my friend to be aboyer. After we out all menu and closed restauarant we begin to general cleaning in the all section and today I help my friend to put tools in the utensil store, after we finished we ate together with my friend.
At 16:30 o'clock Chef Aldino command to oneline and he said to search abaut food terminology of menu who we make today and search how many portion size of the dish from appetizer until dessert. After that we allowed to came back at 17:30.
